Back-to-School 2011 -

Savory Spicy Popcorn (page 20 - nibbles & dips 002)
You Will Need -
Popcorn (bag, air popped)
1 tsp. Cajun Spice Mix - for a whole bag I used 2 tsp. and you can use whatever spices you want! :)
Directions -
Pop the pop corn then add your seasoning and mix/shake well.  Save for up to 3 days in an air tight container.
Preparation & Cooking
2 + 3 minutes
Chicken Burgers (page 106 - savory bites 073)
You Will Need -
1 Small onion
2 tbsp chopped alfalfa sprouts
1 small carrot, finely grated
1 apple, cored, then grated w skin
1lb ground chicken
1 small free-range egg, lightly beaten
all purpose flour, for dusting
olive oil, for brushing
Directions -
Put onion, alfafa sprouts, carrot, apple and chicken in mixing bowl, and stir or use your heads to mix and break down these together.
Add egg and seasoning, and mix w your hands.
Lightly over a plate w flour and divide this mixture into 6 flat burgers.  Place the burgers on this plate and cover so they can chill for 30 minutes
Heat boiler to medium and line a baking sheet with foi.  Brush foil with oil then bake burgers on foil for 8 minutes on each side or till golden.
Preparation & Cooking
20 + 16 minutes + chill time
Strawberry Crunch Cup (page 124 - sweet treats & bakes 087)
You Will Need -
1/4 cup of oats
1 tbsp. sunflower seeds
1 tbsp. pumpkin seeds
1-2 tbsp. clear honey or maple syrup
6 heaped tbsp. thick natural bio yogurt
1/2 tsp. vanilla extract
6 strawberries, hulled and thickly sliced
Directions
Put dry oats in a skillet and toast for 3 minutes on medium heat.
Add sunflower and pumpkin seeds and cook for 2 more minutes.  Make sure you occasionally move them around to avoid burning, you want them to be golden.
Pour into a bowl and stir in honey or maple syrup and allow time to cool
Mix yogurt and vanilla extract
Being to layer oats, yogurt, strawberries and repeat twice.

10 + 5 minutes
